Raise a Grapefruit and Lime Pop
I am a collector of all things. Every year at the beach I am drawn to the lost things that wash up on the shore from distant places. Things like drift wood, beach nuts, sea shells (a classic), rocks, sand and more end up traveling back to Texas in my suitcase nestled next to my aloe lotion and yet another pair of sandy sunglasses (another classic). I collect so that I can create. That driftwood I carried 1.2 miles up the sandy shore now holds my air plants, the seashells were made into hair clips that give me all of the bohemian vibes and wildflowers from the roadside decorate our dinner table. Collect to create.
My collections also include food. I adore keeping our fridge stocked with organic fruits and veggies. I recently decided to start growing a collection of herbs, and as I type this our sage, rosemary, basil, parsley, mint and lemon balm are happily soaking in sunshine. But the lemon balm is the story today.
Lemon balm is the dreamiest herb because of its bright green leaves and strong, lemony aroma. I generally use it in my hot teas at night and in lemonade, but with Texas summer temperatures knocking at the door I've been craving a burst of cool relief to disrupt the heat. So began the search through our well stocked fridge to collect popsicle ingredients.
What stuck out immediately was all of our citrus fruits! I grabbed some grapefruits and limes and started to educate myself on how to make popsicles from scratch with limited ingredients. After reading through approximately 6 recipes, I decided to do my own thing. 2 large grapefruits, 1 lime, 2/3 cup of granulated sugar, 2 cups of water and a guessed amount of fresh lemon balm garnish from our garden later we have the dreamiest Grapefruit & Lime pops to cut the summer heat and make you feel like you are lounging in Greece all at the same time!
Grapefruit & Lime Pops
2 large grapefrits….1 lime
2/3 cup of granulated sugar….2 cups water
handful of fresh lemon balm
Add water, sugar and half of the lemon balm to a pot and bring to a boil over medium/high heat. Once boiling, let the mix cool and then stir in the grapefruit and lime juice. Pour into popsicle molds, add the remaining lemon balm for garnish and let freeze for 4-5 hours. Eat outside while soaking up the sunshine listening to your favorite summer playlist.
I want to leave you with this thought of inspiration as my husband is handing me yet another popsicle, create. That's it. Simple as that. Create. Be bold. Dare to dream. Mix up the recipe. Enter into the world with a loud and proud "yawp!" (any Whitman fans out there?). Create joy and laughter. Create the most epic pillow fort with your kiddos or the most relaxed pizza and chill night in. So, I raise this grapefruit and lime pop to all of you today! Happy creating.
